Sweet & Savory Acorn Squash

I must credit my dear friend Mike Smith with this recipe :-)

Pre-heat your oven to 400 degrees.

Slice the acorn squash vertically (from the stem down), spoon out the seeds and lay the halves flesh side up in a small baking dish.

Place a spoonful of butter or butter substitute – depending on your omnivorous preference, a couple of spoonfuls of maple syrup, a dash of salt, cayenne pepper and cumin (to taste) into the bowl of each half of squash.

Place in the oven for about 20 minutes, remove and spoon the syrupy, buttery mixture along the edge of the squash to keep them moist and put back into the oven for another 20 minutes or until the flesh is soft when pierced with a fork.

The squash will be spooned out easily and serves as it’s own dish for the topping! Enjoy!

What you need: acorn squash, butter (or substitute), cumin, cayenne, maple syrup.

Time required: 5 minutes prep. 40 minutes cook time.

How tasty? REALLY TASTY!
